For your host Dario, cooking is a journey that begins in his mind, and can only be bound by the location and the season. Eating food is joyous, but to truly grasp the essence, you must understand the history of the region, the origins of the food and the cooking process.


Learn about the special local technique of cooking under peka, which,although seems simple, requires a great skill and experience. Peka is an iron dome placed over a pan with food, covered in hot charcoal and left to slowly cook for a couple of hours. Traditionally, peka is mostly used to prepare lamb, veal or octopus, alongside with potatoes, carrots and onions, seasoned with various Mediterranean spices. Vegetarian option is also available upon request. The domed lid, shaped like a cupola, can be made of iron or cast iron, but true connoisseurs prefer earthenware. Food under peka is cooked in a fireproof pot or directly on a stone slab. Prepared that way, this delicious meal is perfectly paired with a glass of fantastic local wine.
